‘Global fusion menu’ planned at new Fredericksburg restaurant

Editor’s note: The following report comes from Free Lance-Star reporter Cathy Jett:

Jay’s Restaurant & Lounge, located in Greenbrier Shopping Center off State Route 3, will have its grand opening on Thursday, Sept. 6.

The restaurant features a global fusion menu with mostly local ingredients, such as steaks from Olde Towne Butcher in downtown Fredericksburg. There also are new twists on classic dishes, such as crab cakes served with lemon aioli.

If diners want something really special, they can reserve the chef’s table, and the chef will create something specifically for them based on their preferences.

Patrons can order a variety of unique specialty drinks and alcoholic shakes from the bar or the lounge, where they’ll receive more personalized service. There will be one server for every two groups in the lounge, for example, and a bartender can come over to discuss special orders.

Jay’s also has a lighting system can synch with the music—whether live or played by a deejay.
